I think an important thing to remember when discussing how fate handles its servant designs is that fate as a series was not created to be "a franchise about historical and mythological figures". The servants were simply a tool used to tell the story of fate stay night. It just so happened to be that the servants became the most popular part and so later on with other installments that became the focus. What I'm saying here is that fate never intended to try and be a historically/mythologically accurate portrayal. Understandably if people get into fate because of their interests of history/mythology they're likely to be disappointed. What fate ACTUALLY does is use myths as inspiration, changing and combining them to make something new, which is actually pretty similar to how many of these myths came about in the first place.
